Last fall I introduced you to our favorite art curriculum: A Simple Start in Chalk Pastels from Southern Hodgepodge? {read it here!} Since starting the curriculum our ENTIRE family loves art…especially pastels! We love all the Southern Hodgepodge pastels ebooks…but…my kids were beyond thrilled when they found out we had gotten a brand new pastels book about…SHARKS from the lovely Tricia Hodges!!! The Sharks Pastels was the perfect addition to our under the sea unit study we are doing for the month of September! But I couldn’t make my little wait until we started our study, so we broke out the pastels and went shark crazy!

Portobella Pesto Pizza {YUM!!}


Ultra gourmet pizza for a fast food price!!
We love pizza at our house but sometimes I get really sick of making red sauce spleen cheese or pepperoni pizzas so I decided I wanted to update the little bit with something a little bit more gourmet and grown up!
You’ll be surprised your kids will love it
You can either cook it in the oven or on the grill today I decided to cook it in the oven because it’s snowing outside
Makes 2 Pizzas:
  • 4 – 6 tablespoons extra virgin olive oil
  • 2 to 3  Portabella mushrooms
  • one small onion
  • a half a cup per pizza with pesto sauce (Either homemade or store-bought will work perfect for this pizza)
  • a cup of the Parmesan and Romano cheese per pizza (I like the already shredded cheese)
Pre Heat oven to 425
Step 1: mix dough and set aside
-pizza dough (You can either make homemade pizza dough or buy the boxed “just water” type of pizza dough both will work great for this recipe)
-Sauté portobello mushrooms and onions together in a pan with 2 tablespoons of olive oil
-Grease your pan this can be at pizza pan a cookie sheet or even a pizza stone I like my pizzas to be square so I’m using a square cookie sheet
-Roll out dough on your desired pan style. I like my pizza crust very thin so I roll the crust to all the edges…poke a few holes in the dough {the crust wont bubble and have air pockets}
-After my dough was rolled out I like to add a light coating of extra-virgin olive oil to the top of the crust before I add the toppings
– Cover crust with pesto sauce
– Add toppings
Bake at 425 for 15 – 20 minutes or until cheese is bubbly, remove from oven and let sit for a minimum of five minutes before you cut and serve
Mmmmmm Enjoy!!!
Be ready to hand out seconds!!!
